VEGETARIAN BOLOGNESE
INGREDIENTS:

1/2 zucchini

1 tomato
-
1/2 can beans
-
3 mushrooms
-
1 celery stick
-
1 tsp olive oil

1 handful spinach leaves
-
1/2 can tinned tomatoes
-
1 tsp oregano
-
1 tbs hummus
-
1 tsp bone broth (optional)
-
1 can tuna (optional)
METHOD:
In a pan, add olive oil and chopped zucchini, tomato, celery, mushrooms and oregano. Stir and let cook until veggies soften. (also add bone broth if using)
Add spinach and drain and wash bean then add to pan once veggies have cooked. (also add tuna if using)
Let everything cook for around 5 minutes (stir so it doesn’t burn)
Transfer to a bowl and add hummus on top to serve!
(also have with noodles, rice, toast etc. if you’re hungry!)
