BEETROOT AND FETA SALAD – Moose Cow Fish

BEETROOT AND FETA SALAD

Ingredients:

  • 1/2 x cup spinach

  • 1/2 x cup kale

  • Sliced red onion

  • 1/2 x avocado

  • 1/4 x chopped cucumber

  • 1 x handful cherry tomatoes

  • 1/2 - 1 x cooked and chopped beetroot

  • Crumbled/chopped feta cheese

  • Meat (optional) - roast chicken or tuna

  • Sour Kraut (optional)

Method:

Add all the ingredients into a large bowl, then dress with following dressing:

Dressing:

  • 1 tsp x Tahini

  • 1/2 x tsp mustard

  • 1 x tbs apple cider vinegar

Mix all together in a small bowl and pour over salad!

TIP: Try cutting up the salad with a knife before you eat it as it will mix everything together and make sure everything is in mouth sized pieces! I then usually eat it with a spoon and it tastes like that yummy bit you get at the end of salads where the dressing and smaller pieces of food and all mixed together :)
