This recipe is incredibly versatile and can be mixed and matched however you like! These are the basic principles:



  • Veggies of your choice (I love carrot, zucchini, broccoli, brussels, sweet potato or whatever is in the fridge…) I’d choose up to 3

  • A handful of greens (spinach, lettuce, rocket etc.)

  • Meat or protein of choice (I love tuna can you can also use; any fish, chicken, red mean, tofu, beans, tempeh etc)

  • Any other salady things you like (ie. avocado, cherry tomato, feta cheese, chickpeas, grated carrot, cucumber, beetroot etc.)

  • 1 tbs of toppings (eg. hummus, dip, mayo, tatziki, greek yogurt, mustard etc.)

  • Dressing (ie. vinegar, lemon juice, pepper, siracha etc.)


Chop up the veggies you want to use and add them to a bowl with some olive oil and spices you like (my favs are tumeric, cajan pepper, ginger and black pepper atm). Microwave for 4-6 minutes depending on how much you’re cooking or how tough the veggies are (ie. sweet potato 6 minutes, zucchini etc 4).

While the veggies are cooking, prepare anything else you want to add (chop up or get eveything ready to go)

Once the veggies are cooked, add everything else you want into the same bowl and add toppings and dressing on top.

Mix everything together and ENJOY
