Caramelised Banana and Choccie Muffins
These muffins are a perfect way to get rid of lots of old bananas you have sitting at home, AND, any left over Easter chocolate you may still have. They’re also super healthy, easy to make a delicious as well, which is a bit of a win :P
INGREDIENTS:

3 x mashed bananas (1/2 extra one to top)

1/3 x cup coconut sugar (or brown sugar)

1 x egg

A little bit of:
-
Cinnamon
-
Nutmeg
-
Bicarb soda
-
Vanilla essence

1 x LARGE tbs crunchy peanut butter

1 x tbs tahini
-
1/4 x cup soy milk
-
1-1.5 x cup self raising flour
-
1 x tbs maple syrup (extra to top)

Chocolate/ left over easter chocolate
METHOD:
Preheat the oven to 180C.
Add the 3 mashed bananas to a bowl, as well as sugar and egg. Mix everything together.
Add cinnamon, nutmeg, vanilla, PB and tahini, and make sure everything is well mixed through.
Add soy milk and bicarb soda, mix agains. Then add flour.
Chop up chocolate into small chunks and add to mixture, gently stir through.
Oil a cupcake tin however you desire and spoon in mixture, making sure each one is roughly equally filled.
Chop up banana and push a small piece into the top of each muffin, then top with maple syrup.
Bake in the oven for 18-20 mins, or until the tops of the muffins start to brown.
Remove from oven and let cool before removing from cupcake tin.
