CHICKEN AND CHICKPEA SALAD – Moose Cow Fish

CHICKEN AND CHICKPEA SALAD

INGREDIENTS:

  • 1 handful cherry tomatos

  • 1/2-1 cup spinach 

  • 1/2 cup washed chickpeas

  • 1 chunck lite feta

  • 1 celery stick

  • Meat of your choice (I used 2 chicken breast strips)

  • 1 large tsp mayo

  • 1/2 lemon OR 1 tbs apple cider vinegar 

  • 1 tbs American mustard

  • 1 tbs tahini

Method:

Cup up the tomatoes and celery and add to a bowl, with spinach as base. 

Wash and dry chickpeas, then add to bowl, with chicken and feta

Drizzle mayo, tahini and mustard to top of salad and add vinegar!

Stir all together then enjoy! xx
