HOME-MADE PESTO PASTA
INGREDIENTS:

1 x pack whole-grain spaghetti
PESTO SAUCE:

1 x avocado
-
1/2 x lemon juice
-
1 x handful basil leaves (or a good shake of dried basil)

1 x handful spinach
-
Grated parmesan/ nutritional yeast
-
3 tbs pine nuts
-
A dash of milk
-
Black pepper
VEGGIES/ OTHER:
-
3 x mushrooms
-
2 x cans tuna
-
1 x handful cherry tomatoes

1 x tbs olive oil
METHOD:
Add all of the ingredients for the pesto sauce to a blender and blend all together. Add more lemon or spinach to taste.
Cook pasta over the stove. While pasta is cooking, chop the mushrooms and add with olive oil to a pan and cook over medium heat. Add tomatoes and tuna and let cook while pasta cooks.
Drain pasta then put back into saucepan. Add tuna mixture and pesto sauce and mix through.
Serve in a bowl, topped with parmesan cheese/nutritional yeast
