PB CUP PROTEIN BALLS

INGREDIENTS:

  • 2 x cups dates

  • 2 x tbs vanilla protein powder

  • 1 x tbs cacao powder

  • 2 x large tbs peanut butter

  • 1 x tbs coconut oil

  • 1 x tsp cinnamon

  • 1 x tsp vanilla essence

  • 1 x pinch salt

  • Dark choc chips (75% cocoa or above preferably)

METHOD

Use a food processor (or bar mix) to combine all the ingredients together, expect the dark chocolate. I wouldn’t recommend using a blender unless you have a very good one as the dates get stuck sometimes.

if the mixture is a bit dry (or tastes dry) add more coconut oil or peanut butter! If it’s not sweet enough add some honey!

Once you are happy with the taste and texture of the mixture, add in the chopped chocolate or choc chips and blend for like 10 seconds so they mix through.

Use your hands to roll the mixture into bit size (or whatever size!) balls, which you can then roll in cacao, desecrated coconut or buckinis (or just leave them plain!).

Repeat this until you have used up all the mixture, then stack them up on a plate and store in the fridge!

There you have perfect, easy and filling snacks to take with you on the go or whenever you need a quick fix!!
