• 1 x handful spinach

  • 1 x small can drained and washed chickpeas

  • 1 x handful cherry tomatoes (chopped)

  • 1/4 x chopped red onion

  • 1/2 x avocado

  • chopped cucumber

  • 1 x can tuna

  • 1 x tbs hummus

  • A drizzle of white vinegar

  • A poached egg


Add the spinach to a bowl with the chick peas, cherry tomatoes, red onion, avocado and cucumber. Toss it all together lightly

Drain the oil from the tuna and add to salad, breaking it into smaller pieces when removing from the can

Add hummus and vinegar, and use a knife to cup everything up or just stir it all together using a fork, so hummus acts as a dressing with the vinegar.
