TERIYAKI CHICKEN BOWL!
Ingredients:

approx 1 cup Broccolini/broccoli

approx 1 cup of chopped Cauliflower

1 handful of Brussel sprouts

1 egg

Grated cheese
-
1/2 tbs Olive oil
-
Oregano
-
Salt and pepper
-
Pesto (optional)

1-1.5 tsp teriyaki sauce
-
1 chicken fillet (cooked in teriyaki sauce)

I also added tomato chutney on top, however I tend to eat weird food combinations so this is completely optional…
Method:
Chop veggies into small pieces and place in a bowl all together. Add oregano, pepper, teriyaki sauce and olive oil and stir until well mixed.
Create a well (small hole) in the centre of the veggies and crack the egg into it. Add cheese ontop off egg.
Microwave bowl for 3 minutes then remove.
Add chicken, pesto, salt to top of bowl, as well as any other toppings you may want.
(the chicken I used was from dinner the night before so was cold, if you are cooking chicken especially for this dish, and is already hot, add after second microwaving)
Put bowl back in microwave for further 1.5 mins.
Remove and enjoy!!
(also add a squeeze of fresh lemon if you want)
If you’re wondering why I microwave all of my food, it’s because i’m lazy… firstly, and secondly it cooks so much quicker in the microwave. If you’d prefer to steam or roast the veggies, feel free! This is just how I make this recipe!!
