TOFU SCRAMBLE (VEGAN)

INGREDIENTS:

  • 1/3 pack tofu

  • 1/2 large zucchini

  • 2 tbs Soy Milk

  • 1 tbs Nutritional yeast

  • 1 tsp bone broth or 1 tsp tumeric powder + 1/2 tsp black pepper (vegan)

  • 1 small beetroot (cooked)

  • 1 piece of toast

  • 1 tsp tahini

  • 1 tsp hemp seeds (optional)

  • Beet + ginger sauerkraut (optional)

  • Siracha sauce / Siracha mayo

METHOD:

Add some oil (I used avocado oil but you can use any) tofu (broken into smaller pieces), chopped zucchini, nutritional yeast, milk, bone broth and beetroot to a sauce pan and mix together and cook for 10-15 mins (or until zucchini is cooked).

While pan is cooking, toast your bread and spread tahini on top.

Once ingredients are cooked, add to toast and top with sauerkraut, hemp seeds and siracha.
