VEGAN BAKED BEANS

INGREDIENTS:

  • 1 tbs olive oil

  • 1 handful cherry tomatos

  • 2 mushrooms (I used Portabello Mushrooms)

  • 1/2 cup water

  • Herbs and spices, for each of these I used about 1/2-1 tbs

    • Garlic powder

    • Oregano

    • Tumeric

    • Black pepper

  • Bolognese or tomato sauce

  • 1 handful spinach

  • 1/2 can mixed beans

METHOD

Add the oil to a saucepan and heat it on low heat.

Add the tomatoes (whole) and mushrooms (chopped), let them cook for a minute or so.

Add the water and spices and stir everything together.

Let everything cook for around 5 minutes, mixing so it doesn’t burn.

When the tomatos’ soften, use a wooden spoon to pop them so the juices create more of a sauce.

Once the mushrooms and tomato have browned and softened (cooked), add the beans and tomato sauce and mix it through.

Let the beans and sauce warm up, and the spinach wilt slightly (continue to stir often)

Transfer the baked beans into a bowl and voila!!!

Add cheese to the top of add an egg if you want a bit more oomph or aren’t vegan!
